When life gives you lemons, it's time to make a cocktail! Citrus peels are commonly thrown out once the fruit is juiced or used as a garnish, but did you know you can make a syrup out of them? 1 1/2 oz Wheyward Spirit
1 1/2 oz Lemon Oleo*
4 oz Club Soda
Add Wheyward Spirit and Lemon Oleo to a glass with ice and stir. Top with club soda and garnish with a lemon slice.
*Lemon Oleo
6 lemons (minimum)
1 1/2 cup sugar, divided
- Juice lemons and set juice aside.
- Place peels in a bag or airtight jar with about 1 cup of sugar. Increase sugar if using more lemons. Refrigerate overnight.
- Strain out lemon peels.
- Combine remaining oil (oleo) with lemon juice and remaining 1/2 cup sugar. Warm on stove in small pot to combine. Add 1 oz of Wheyward Spirit to extend the life of the oleo.
- Oleo syrup will keep in airtight container in the fridge for up to one month.
